Edith’s Reduced Sugar Molasses Cookies
These cookies boast the perfect sweetness and all warm holiday spices we know and love.
For years my family has enjoyed my Grandma Edith’s Molasses Cookies, and with the opportunity to partner with Truvia, I was able to take her recipe and adapt it to make a reduced sugar treat, but with the same love and flavor profiles. Let’s dive right into what makes these cookies special.
What Makes These Molasses Cookies Special?
Aside from the holiday inspired molasses flavors and cozy spices, what makes these cookies most special is that they can be enjoyed by all, even those that have dietary restrictions or preferences. For added sweetness and appeal, the cookies are topped with a simple glaze making them almost irresistible and perfect for gifting to loved ones.
The cookies can be made by both advanced and novice makers alike, aiding in their versatility and approachability.
Equipment and Ingredients Needed:
As far as equipment, these cookies can be made using either a stand or handheld mixer, and require just a few simple ingredients. Aside from typical cookie supplies like butter, flour and eggs, you’ll need molasses, a variety of spices and a few Truvia Sweet Complete Sweeteners. Before getting started, it’s a good idea to plan ahead and look over the recipe, making sure all equipment and ingredients are accounted for and ready. This makes the experience more fun and successful.
Tips and Tricks To Make Molasses Cookies:
1.) Line the cookie sheet with parchment paper for easy lifting and clean up. This will ensure the cookies don’t stick to the pan and also aids in even baking.
2.) Make sure the melted butter has cooled before adding the Truvia Sweet Complete Sweeteners. If the butter is too hot, the sweetener will melt and it will change the texture of the cookie.
3.) Spoon and level the flour for an accurate measurement. Too much flour is often the culprit of bakes that go awry. Measuring flour and other ingredients is critical to baking success and should be treated carefully.
4.) When scooping the cookie dough, do your best to make sure each dough ball is relatively the same size. This will ensure the cookies bake properly without some being overdone while others are undercooked.
5.) When making the glaze, but sure to add a small amount of milk at a time, whisking until the desired consistency is achieved.
Final Tip
Feel free to get creative with the cookie glaze. This recipe calls for a simple vanilla glaze, but feel free to add a pinch of cinnamon or even dip the cookies in glaze instead of drizzling it on.
The cookies are best enjoyed fresh, but can be kept in an airtight container for 3-5 days.
